Since 2011 husband and wife restaurateurs, Cory and Blair Muro, have been elevating the food scene in Valparaiso, IN with their inspired, unique concept eateries. The journey started with Valley Kitchen & Bar, led to three Tomato Bar gourmet pizza bakeries and The Market southern-inspired restaurant and events venue. Like the name of this newest venture implies, this couple keeps moving from one exciting idea to the next.
Ricochet Tacos is an idea that has been stirring for quite some time; in fact, it was nearly the first restaurant they opened. Cory and Blair began their relationship working together in Telluride, Colorado. When they began discussing their first joint project, tacos were something they both felt was a ‘passion food’ for them. They strongly considered opening a gourmet taco restaurant in a major city in Colorado, even flew family out to check out different venues, but ultimately decided to bring their restaurant expertise to Indiana where they would be surrounded by family and friends as they got started.
Five years later, the decision was made to ricochet from one great idea, Valley Kitchen & Bar, to a new one. Cory admits, it was a bold move to close a successful restaurant, but it was time for something new. The moment seemed right to bring the dream of Ricochet Tacos to life. Looking at food offerings in the area, there is a gap in the market for tacos that feature a variety of fresh ingredients. We don’t see ourselves in the same vein as other Mexican restaurants that tend to have a handful of ingredients applied to a menu of 100+ items. Ricochet offers a limited menu of creative, thoughtfully delivered food with a complex flavor profile, all wrapped up in an unassuming taco. The attention to detail extends from house-made chips and salsa and aguas frescas to a specialized offering of craft tequila and whiskey cocktails.
